A short drive from the city brings you to a peaceful countryside farm, often run by a local family, surrounded by olive trees, organic gardens, and open space — a calm escape from the energy of the medina. This is hands-on from start to finish: you select fresh vegetables, grind and layer the spices, and prepare your own tagine the way Moroccan families have for generations. While your tagine slow-cooks, there’s time to walk the farm — to see the organic gardens, learn about the seasonal produce that goes into the dishes, and in many cases meet the animals, including the horses some farms keep.
